Border Grill/Ciudad, a three-unit restaurant group, founded by Mary Sue Milliken and Susan Feniger, is searching for an individual to fill the position of Executive Chef for their flagship Santa Monica location. Border Grill/Ciudad is a growing company with a small, tight knit group of dedicated individuals that are passionate about food and service. We expect first and foremost that the individual joining our group share the same passion and want to be a part of creating a memorable experience for our guests.
+ Strong culinary background, with at least 3 years experience as an executive chef. Extensive knowledge of ingredient pairing and recipe building + Ability to cook great food + Intimate knowledge of labor control; must be able to oversee proper staffing and scheduling. + Relevant financial skills: in depth knowledge of recipe costing, inventory and food cost procedure. Ability to troubleshoot cost problems; teach chefs methodology for maintaining and improving cost. + Human Resource knowledge: ability to recruit, interview, hire and retain talented individuals. + Extremely high quality standards and the ability to teach and maintain all aspects of operations + Strong organizational skills: strict attention to detail. + Bilingual; English and Spanish a plus. + Computer skills: solid working knowledge of Word, Excel and e-mail. + Knowledge and experience with upscale Mexican and or Latin foods a plus. + Background in high volume banquet and off-site catering desired
