Nico Kitchen + Bar, under the culinary direction of New Jersey star chef Ryan DePersio, is an upscale casual concept offering American cuisine with Italian influences. The restaurant is located in the New Jersey Performing Arts Center (NJPAC) in downtown Newark and is operated by CULINAIRE, a dynamic, food-centric hospitality company based in Dallas, Texas.
CULINAIRE provides upscale food and beverage management services to a diverse collection of accounts including cultural art centers, hotels, restaurants and special event venues. We're looking for a talented Chef de Cuisine whom shares our values and passion for the hospitality industry.
You will be responsible for:
- Coordinating, supervising, and participating in activities of the culinary team and other kitchen personnel - Food purchasing - Establishing and managing food and labor cost controls to insure a profitable operation - Ensuring quality and consistency are at the highest level while maximizing the operation's personnel and resources - Instilling strong safety and sanitation habits in all associates
What we're looking for:
- Creative and innovative culinary skills - Thorough knowledge of food handling and preparation techniques - Strong inventory and cost controls - Past experience developing production sheets and schedules, job duties, and timelines - Proven leadership skills to achieve goals while maintaining a high expectation of standards in regards to quality and presentation - Proven ability to build/sustain a team spirit and high morale - Ability to consistently produce profit expectations - Basic knowledge of Microsoft Word, Excel, and Outlook - 2 or 4 year formal culinary degree from an accredited Culinary School - Stable work history - Minimum of 3 years experience in a culinary management position within a busy, high end restaurant
