We are seeking an Executive Chef or Chef/F&B Director for a unique year-round historic 30 room Inn in Maine with a 150 seat restaurant, a pub-tavern, and meeting space. The Inn has been completely renovated and ready to be displayed to the customers, as well as to announce the Executive Chef who will proudly lead the inaugural reopening.
This is an excellent opportunity for a current Executive Chef or a Chef de Cuisine to step up into the spot light in their career.
The Inn is owned by a young hotelier group that has strong ambitions to rapidly expand in the 4-Diamond boutique upscale to luxury market place and provide each operation with it's own identify/appeal/menus, etc.
This position could quickly advance to Regional Executive Chef for the company or to a Food and Beverage Director's position.
The Chef should have solid knowledge of Maine cuisine.
Secondly, outstanding menu development skills (researching new offerings that appeal to the defined market, costing, pictures, recipe cards, buy-in from the team, ability to communicate and train the front/back), as well as able to implement season menus and catering menus using local vendors and ingredients.
Thirdly, the Chef should have proven abilities to be a successful leader: A well liked team player able to hire/discipline and provide ongoing training and create an inspired and winning team and positively influence the front of the house team members.
The Chef should have a good business sense about him/her and be skilled in managing cost (labor, food and supplies), proactive towards liability concerns (accidents) and promote strong sanitation techniques.
Lastly, the Chef should like to have fun at work and have high tolerance for typical business stress issues. The Chef should have a fun outgoing personality that encourages people to desire to be on his/her team, very guest visible and comfortable with being media friendly.
****It is important that the Chef understands how important of a role he/she will play in the organization and marketing of the restaurant. The chosen Chef should enjoy being visible in the dining room mingling with guests as showmanship and the appeal to the local market place is paramount. Equally important, the chosen Chef should feel comfortable with being in the dining area as often times he/she might be the senior leader in the operation.
