CHEF is hands on with the daily operations of the restaurant's main kitchen, providing professional leadership and direction to kitchen personnel. Ensures that all recipes, food preparations, and presentations meet restaurant's specifications and commitment to quality. Maintains a safe, orderly and sanitized kitchen. Demonstrates this by example, using proper food handling techniques. Reporting directly to the Owners. This position will be responsible for procurement and purveying of all food and related products, menu engineering, cost control, and hiring, supervision and training of staff.
Ideal candidate will be energetic, enthusiastic, and able to ASSIST IN NEW OPENING of HIGH VOLUME RESTAURANT in next 4-6 months.Previous experience in similar operations a MUST! Expected volume $10-12 M. Experience working with BATALI,BOULUD,KELLAR,SAVOY,MINA,ROBUCHON,DUCASSE,MICHAEL WHITE, PICASSO,ANDRES,ADRIA,ACHATZ,BURKE,PORTALE is PREFERRED. Must have hands on management style with strong communication and organizational skills and the ability to effectively manage and motivate a diverse staff.
