Position Description:
The Executive Sous Chef is to provide supervision for overall food operations as well as administrative duties including hiring, staffing, scheduling, ordering, food quality and preparation while upholding Beau Rivage standards.
Minimum Requirements:
Minimum of seven (7) years experience in high volume operations. Must have an extensive culinary background, people skills and administrative skills. Must have an extensive knowledge of all kitchen equipment and operations. Thorough understanding of profit and loss management. Previous hands on experience in presenting culinary training and development of new programs. Must be able to read, write and understand English. Culinary degree preferred.
Essential Functions:
Responsible for ordering all food products through Food & Beverage Buyer and Warehouse Supervisor. Responsible for overseeing the staffing, scheduling, new hires and replacement in all kitchen outlets. Responsible for close daily monitoring of all food outlets, personnel, food quality, production, staff, product and presentation. Oversees banquet kitchen functions and services. Attends all meetings for in house functions, food designs and menu development. Handles employee relation issues, tracking employee records, disciplinary situations and miscellaneous matters. Communicates with Executive Chef on weekly outlet operations. Trains employees with culinary skills. Participates in off-property banquet functions and food shows.
