Shake Shack, part of Danny Meyer?s Union Square Hospitality Group, is a growing concept, with an established and busy Shack in Madison Square Park, and a new Shack to open on the Upper West Side later this year. We are seeking a culinary-driven individual to direct our Commissary Operations, including hospitality, purchasing & receiving, managing inventories & tracking systems, delivery of product to Shake Shack(s), personnel management, quality control, financial performance and physical plant maintenance.
OVERVIEW OF DUTIES: - Manage, inspire and train all personnel for adherence to all standards of quality and policy - Manage accuracy, safety and timeliness of daily delivery of goods to Shake Shack(s) - Manage production of all goods with prep team, ensuring quality of all items prepared - Maintain sufficient and accurate inventories of all products - Place orders and manage accuracy of receiving - Monitor and maintain daily tracking systems, including labor and food cost - Create, develop and maintain recipes for new and current items
REQUIREMENTS: - Culinary background, with a knowledge of various cooking procedures and techniques; knowledge of local health code - Skilled and licensed (w/ a clean driving record) to safely drive and operate a 16? truck in urban driving conditions - Skill to use a personal computer and various basic software programs - Ability to effectively communicate with management team, vendors and team members - Ability to regularly lift 50 lbs. - Ability to multi-task and effectively solve problems
EDUCATION & EXPERIENCE: - Culinary degree from an accredited institution, or - Minimum 2-3 years experience cooking in a professional kitchen under the supervision of a professional Chef, or - Minimum 2-3 years related experience, or - Equivalent combination of education and experience
