Position Description:Job Summary:
The person in this position is responsible for execution of the hot foods including meats, fish, poultry, starches and vegetables for the Chap!&s restaurant. He/She needs to be able to follow the standardized recipes and ensure that food quality; portioning and presentation reflect the Cascade Hotel!&s philosophy for fresh, healthful and innovative cuisine.

Essential Duties and Responsibilities
1. Food Preparations and Quality Assurance: (90%)
X Prepare food according to standardized recipes and Cascade Hotel!&s standards.
X Plate food in the most appealing way possible and in accordance to our plating guide.
X Knowledge of how to use kitchen equipment and tools.
X Assists other chefs in the kitchen with preparation of food for the restaurant and banquets.

2. Health, Safety and Sanitation: (10%)
X Follow established health and safety standards.
X Store food items properly to ensure food safety.
X Keep your work area clean.

Job Requirements:

Education/Experience: Significant amount (3+ years) of cooking experience in specified area or other related operation required. Additional experience in high volume operation preferred.

Skills: Good food preparation skills and able to follow recipes and instructions. Team player with a can-do attitude

Knowledge: Knowledge of International cuisine as they relate to and are the inspiration for our Vail Cascade Hotel Cuisine. Knowledge of kitchen equipment and proper usage.

Physical: Able to stand for long periods of time, to use various kitchen equipment. Able to lift and carry 40 lbs.

Other Preferred Job Qualifications: High-end restaurants operation experience. Culinary training. Foreign language skills (Spanish). Experience in the food and wine industry, specifically special events.
